The Valle di Assisi family loves simple and genuine things, authentic tastes and raw materials that our land gives us throughout the year. As you know if you already stayed here, we produce extra virgin olive oil, a typically Umbrian excellence and appreciated all over Italy. Local olive oil, a completely vegetable ingredient with excellent nutritional values, is the secret of many recipes, both sweet and savory, at the Recanto restaurant.

Today we reveal one ideal for cookies to give at Christmas, but delicious in all seasons: Valle’s oil cookies with lemon oil of our production.

 

Ingredients (about 60 cookies)

  • 330 g flour 00
  • 200 g rice flour
  • 200 g sugar
  • vanilla seeds
  • 1 g vanilla salt
  • 250 g organic lemon oil
  • 50 g of water
  • 80 g egg yolks

 

Preparation

 

Ready to cook? Let’s start: sift the flours on the work surface and arrange them in a fountain. In the center, add the sugar, the vanilla seeds and a pinch of salt. Then blend the egg yolks and water with an immersion blender, pouring the oil slowly, until the mixture appears clear and firm (it will only take a few minutes).

Pour this sort of mayonnaise in the center of the fountain, trying to collect it all with a spatula. Knead the mixture with the sugar using your fingers and, once homogeneous, begin to gradually incorporate the flour. At this stage, your goal should be the complete absorption of the flour inside the dough, so as to end up with clean hands and a homogeneous ball on the work surface.

Let the shortcrust pastry rest in the fridge for about 30 minutes, more than enough for a shortcrust pastry without butter. After this time, roll out the pastry on a lightly floured surface until it reaches a thickness of about 5 mm. Cut out some rectangular cookies and transfer them to a baking tray lined with baking paper previously greased with a drizzle of oil, keeping them only a little apart. Prick the surface of the cookies with a fork - for purely decorative purposes - and bake in a preheated oven at 175 ° C for 12-15 minutes, until they are slightly golden. As soon as they are baked, they will seem soft, but don't worry: let them cool for at least 5 minutes, then transfer them to a wire rack for complete cooling ... and tasting!

 

Storing and tasting

 

Our cookies can be stored for a few days: put them in a tightly closed box with a vanilla bean (it will release a persistent aroma even if you have already used the seeds). They keep crumbly for about a week, greedy thieves permitting.

Let your friends and family taste your cookies: we are sure they will appreciate them and will not notice that we have used oil instead of butter. The only clue to the secret ingredient is a light and pleasant fruity scent that magnetically binds to the untreated lemons aroma, making the cookies fragrant and fresh to taste. For a refined snack, accompany them with a cup of floral green tea.
